In the video, Hope took us through the best step by step process on how to prepare or make Coconut Fried Rice with Shrimps and Chicken.
Ingredients used:
To season and steam the chicken:
1. 1 small onion
2. 2kg chicken thighs
3. 1 habanero pepper (optional)
4. 3 garlic cloves
5. 1 inch ginger
6. 1 tsp curry powder
7. 1 Bay leaf
8. Fresh rosemary or 1 tbsp dried rosemary
9. 1 tbsp chicken seasoning
10. Salt
11. Oil
For Rice:
1. 600g Shrimps
2. 1 large onions
3. 1 tbsp ginger
4. 5 cups Basmati rice or any rice of your choice
5. 1 can coconut milk
6. 3 tbsp coconut oil
7. Salt and seasoning cubes
8. 1 tbsp ginger and garlic paste
For vegetables:
1. 4 chopped carrots
2. 1 green, yellow and red Bell peppers
3. 1 habanero is or scotch bonnet peppers
4. 1 cup green beans
5. 1 seasoned vegetables with chicken seasoning
